Deconstruction Of A Bell Pepper

Or, how to cut a bell pepper.




Start by cutting the top and bottom of the pepper off. This creates a flat surface on the bottom and allows you to see through to the inside.


Make your first cut into the pepper to the right of the pith (the bitter white part).


Your next cut will be right before the next line of pith.


You now have one section of pepper, and a peek at the inside.


Next, you will be cutting behind the pith.

And then once again in front of the pith.


Continue cutting around until you have a skeleton of a pepper.


Notice, there are no seeds on the pepper or the cutting board that need to be wiped away. You also have lovely pieces of pepper that can easily be cut any which way you desire.

Brilliant! I've never known the right way. I always end up scraping the seeds out. I'm totally doing this next time. We love sweet peppers in our house;)

Martin Yan does something similar, but after taking off the top and bottom he just does one vertical cut and then rolls and cores in a single move to end up with one long slab of pepper.

but it can be so much easier!
1. cut pepper in half
2. tear core off top of pepper halves using fingers
3. run halves under tap for 3 seconds

that at least is my favourite approach.

also..
keep the seeds in a jar with just a little water and keep the lid on..and in a week or two they will germinate and you can have many more peppers to experiment on :)

I usually am making stuffed peppers, so this is not much use. What I do is cut the peppers in half from top to bottom, remove the innards, and stuff the halves, heaping them up. Two halves = a serving.
